Thai Salad Ingredients
2 zucchini peeled (double if not eating raw)
2 carrots peeled (double if not eating raw)
Thai Peanut Sauce Ingredients
2 tbsp unsalted, palm oil free peanut butter
1 - 2 tsp soy sauce (to taste, coconut aminos for paleo)
Juice 1/2 lime
1 tsp shredded fresh ginger
1 tsp chilli powder (optional)
1 tsp maple syrup (optional)
Equipment & Extras
Spiralizer/Julienne Peeler/Potato Peeler
Skillet (optional if cooking vegetable noodles)
- Whisk all Thai peanut sauce ingredients together in small bowl
- Prepare zucchini noodles and carrot noodles with spiralizer, julienne peeler or potato peeler
- Serve vegetable noodles raw or cook in skillet over medium high heat for 3 to 5 minutes until desired texture
