The homemade thai peanut sauce adds a delicious burst of flavour to your noodle salad and keeps meal prep and healthy lunches interesting.

Zucchini Easy Recipes | Thai Salad with Peanut Sauce

Thai Salad Ingredients 

  • 2 zucchini peeled (double if not eating raw)
  • 2 carrots peeled (double if not eating raw)

  • Thai Peanut Sauce Ingredients

  • 2 tbsp unsalted, palm oil free peanut butter 
  • 1 - 2 tsp soy sauce (to taste, coconut aminos for paleo)
  • Juice 1/2 lime
  • 1 tsp shredded fresh ginger
  • 1 tsp chilli powder (optional)
  • 1 tsp maple syrup (optional)
  •    

    Equipment & Extras

  • Spiralizer/Julienne Peeler/Potato Peeler
  • Skillet (optional if cooking vegetable noodles)
  •  

    Recipe Steps

    1. Whisk all Thai peanut sauce ingredients together in small bowl
    2. Prepare zucchini noodles and carrot noodles with spiralizer, julienne peeler or potato peeler
    3. Serve vegetable noodles raw or cook in skillet over medium high heat for 3 to 5 minutes until desired texture
