Quick Vegan Recipe: Black Bean Buddha Bowl and Homemade Chimichurri Sauce


A lot of times we have the best intentions to eat well, maybe eat more plantbased or vegan but a lot of the recipes out there are just too complicated or take too much time. If this is your dilemma then this quick vegan recipe is for you! It's perfect for meal prep as a packed lunch (no cooking required) and also doubles as a yummy dinner main for when you want something low maintenance but tasty.

The buddha bowl is quickly becoming a classic healthy meal idea but this particular recipe takes it to the next level with the Chimichurri sauce! Yummy, tangy and delicious, this sauce will have you craving more!

Quick Vegan Meal Ideas_Black Bean Buddha Bowl with Homemade Chimichurri Sauce

Ingredients - Bowl

  • 1 can black beans rinsed
  • Assorted veggies (I used red cabbage, cauliflower rice, carrots, cherry tomatoes, spinach and radishes)

  •   

    Ingredients - Homemade Chimichurri Sauce

  • 2 big handfuls of coriander (you can sub with basil)
  • 2 big handfuls of parsley
  • 5 garlic cloves peeled
  • 5 tbsp (70g) olive oil
  • Juice from 1/2 lime
  • 1 tsp (5g) red wine vinegar (less if prefer less bitter)
  • 2 tsp (5g) dried onion powder
  • Salt + Pepper to taste (start with 1/4 tsp each)

  • Equipment & Extras

  • Food Processor (for sauce)
  •  

    Steps

    1. Combine all chimichurri sauce ingredients in food processor until you get consistency you like. Taste and adjust salt + pepper as needed. 
    2. Place all ingredients of buddha bowl into bowl.
    3. Top bowl with sauce or serve on the side.
