This vegan crumble recipe is healthy, yummy and super simple.
Makes: 2 to 4 servings
Preheat oven to 350F/180C. Then begin by mixing all crumble filling ingredients in a bowl (including the fit foodie extras if you're using them.)
Next, pour all filling ingredients into a greased baking pan, spreading evenly.
Follow this by mixing separately the nuts and coconut in your crumble topping in a bowl. (For the ground nuts you can chop by hand, by pre-ground or use food processor.) When well combined, pour evenly on top of crumble filling in pan.
Now pour melted coconut oil and maple syrup on top of complete crumble and also sprinkle cinnamon. Put pan in oven and cook for 35 minutes or until the crumble topping is golden brown and there is no more watery juice filling the pan.
Leave to cool for 10 minutes and then top with coconut cream, yogurt or whatever you want. Enjoy!
