Vegan Burger Recipe: Sweet Potato and Black Bean Burger

What's that? A delicious veggie burger you say? Look no further because I've got just the recipe for you, which is packed with some southwest flavor!

This easy vegan burger recipe will quickly become one of your meal prep besties because it's simple, yummy and stores for days in the fridge. Enjoy on a bun for full burger effect or have it on the lighter side on a bed of lettuce. Either way, it's sure to please!

Baking Time: 25 - 30 minutes
Total Time: 40 - 45 minutes

Vegan Burger Easy Recipe | Sweet Potato and Black Bean Burger Recipe

Main Ingredients 

  • 1 can black beans (14oz / 400g) rinsed and drained
  • 2 sweet potatoes peeled, cut into thirds and boiled (boil 15 min)
  • 2 chia eggs 
  • 2 tbsp (14g) coconut flour (1 if you want a moister burger)
  • 1 tsp (2.5g) each of these spices: salt, ground cumin, garlic powder, paprika and cayenne
  • Pepper to taste

  • Guacamole
  • Chopped Red Onion

    Equipment & Extras

  • Baking tray greased
  • Optional Food Processor but not necessary

    Steps

    Preheat oven to 190C/?F. Next, smash boiled sweet potatoes in a bowl, follow by smashing in black beans, chia gel and finally spices.

    Form mixture into patties and place on greased baking tray. Cook for 25 to 30 minutes or until at the texture you want. You could also bake them for less time and put them under grill oven setting for a minute or two to get that nice charred finish.

    Load them up on your bread or lettuce "buns" and put on your toppings. Aproveite!
