The sweetest and final of the Fit Five India recipes - a creamy, fruity and floral popsicle. As you'll have seen from the last sweet recipe, a lassi is a yoghurt-based drink with spice. This one kicks it up a notch by freezing the mixture and adding bite-size strawberries for texture.
Again, remember process is key with the lassi so try to follow the steps carefully without rushing through them. The reward is a taste of summer time!
Prepare the strawberries. You'll want to loosely chop half of them (these will go into blender eventually) and chop the other half into bite-size pieces (these will stay whole and give your pops texture.)
Next, prepare the cardamon pods if you're not using powder. Ideally you'd have a pestle & mortar but if you're not a regular chef, you can get resourceful; place pods in a bowl and use a bent spoon to smash them, take out the seeds. Use this method to crush the seeds. Set aside.
After the pods, it's time to prep your honey. You'll need to melt it as this ensures an even spread throughout the lassi. The best method is to add boiling water to a small bowl and then place the honey in a smaller glass bowl nestled inside.
Now it's time to blend. Start by adding adding your "warm" ingredients into the blender - this will include ALL of the coconut cream, loosely chopped strawberries, rose water, honey and cardamon. Blend well. Then add chilled water and yoghurt to the mixture, blend again. Finally, drop ice cubes in, one at a time.
Pour mixture into popsicle molds (it should make 4 to 6 depending on size of mold.) Leave some room for your bite-size strawberries. These will go in next. Pop mold in freezer overnight.
Enjoy sprinkled with cacao for a chocolate fix. Muito bom!
