Kiwi Flowers & Coconut Crumble (Quickie)

Kiwi Flowers & Coconut Crumble (Quickie)

Every Friday I post a sweet or savoury, healthy recipe to welcome in the weekend.

This Recipe

I'm not a very patient person but I love experimenting with new recipes and I'm a huge foodie. So sometimes I'll take the time to cook or bake but more often than not, I just want my recipes to taste good, look amazing and be ready super fast. This is possible!

Over the years, I've honed my quickie fancy food skills to a few choice recipes. This is one of the most impressive because it looks phenomenal and no one would ever guess it takes less than ten minutes. Try them for a tropical style brunch or summer picnic.

  • 3 kiwis
  • 4 spoonfuls full fat coconut cream
  • 1 handful coconut flakes
  • 1 handful granola (I used Paleo Berry Granola
  • 1 handful pumpkin seeds
  • optional berries to top

Begin by making small diagonal cuts all around your kiwis. The cuts should be spaced an inch or two apart from one another. Next, make the same size diagonal cuts in the opposite direction; you'll end up with a bunch of triangle shapes (see below.) Be sure to make your cuts deep enough or the fruit won't separate so easily.

You may struggle with this technique, initially, but that's where having loads of coconut cream benefits you - just smear it over any mishaps! When I first learned this, my attempts looked like jagged jaws and nothing like pretty flowers. Rest assured that with practice, you'll be able to prep your kiwis (or any other fruit) in less than 60 seconds.

Once kiwis are prepped, combine coconut flakes, pumpkin seeds and granola in a food processor until fine crumbs form.

Finally, it's time to dress-up your kiwis! Start by putting a dab of coconut cream on top of each kiwi. Follow with a sprinkle of your coconut & seed crumble. To make a more intricate flower (as below) add a berry on top, with pumpkin seeds circling around it.

Ta-da!!! Minimal patience required and ultimate wow factor!
