On warm days, that feeling of laziness just creeps right in - making the thought of food prep less and less appealing. Luckily, there are loads of recipes that pack in nutrients and taste and can be made in less than 10 minutes. This is one of my go-tos for post-sweaty workout or on a sunny weekend morning.
Start by peeling your fruit (where needed) and chopping it into bite size pieces. Transfer the mini fruit chunks into your popsicle mold. Follow up, by pouring coconut water on top. Be careful to not overfill these babies or you'll have one hell of a time getting them out of the mold!
Next, place the popsicles in the freezer for at least 4 hours or overnight so that the coconut water can harden around the fruit. When you're ready to enjoy, let them sit for a few minutes to thaw slightly.
Snack on them in the sunshine for a truly tropical experience!
