Spicy Tiramisu (Italy)

This Recipe 

Most of us don't think about making tiramisu; it's complicated, lots of ingredients are involved and they do it so well in restaurants anyway. Instead, tiramisu is that delicious treat we reserve for ourselves on special occasions with an espresso. 

But what if you could make tiramisu at home for a nice coffee break, brunch treat or even after a hard workout? AND what if it had no eggs, no cheese, no refined sugar, no cookies/cake and STILL tasted pretty fantastic? This recipe will give you that with a spicy twist. The chilli brings out the richness of the coffee and cacao.

This PALEO & VEGETARIAN version takes 15 - 20 minutes to make (excluding the cashews which you soak overnight.) Don't be intimidated by the list of ingredients; it's basically the same stuff used across three layers - all you do is measure and blend!

Makes 4 mini cups 

INGREDIENTS - BASE

  • Grain-free Granola - 1/2 cup (113.4g) and I used this one.
  • 4 Medjool dates
  • Vanilla extract - 1/2 tsp (2.5mL)
  • Instant Espresso - 1/2 tsp (.9g) and I used this one.

INGREDIENTS - VANILLA LAYER 

  • Cashews soaked overnight - 1 cup (113.4g) 
  • Full Fat Coconut Milk - 1/2 cup (118m)
  • MELTED Coconut Oil - 1 tbsp (15mL)
  • MELTED Raw Honey - 2 tsp (10mL)
  • Vanilla Extract - 1/2tsp (2.5mL)

INGREDIENTS - COFFEE & CHOCOLATE LAYER

  • Cashews soaked overnight - 1 cup (113.4g)
  • 1 Avocado
  • 1/2 Red Chilli but it's optional!
  • Full Fat Coconut Milk - 3/4 cup (177mL) 
  • Cacao Powder - 1/4 cup (57.7g) but use half if you prefer less strong flavor
  • Instant Espresso - 1 tbsp (5g)
  • MELTED Coconut Oil - 1 tbsp (15mL)
  • MELTED Raw Honey - 2 tsp (10ML)

 

Steps 

If you haven't already, make sure to soak both cups of cashews overnight. This softens them to give you that cheesy, creamy texture. Once cashews are ready, this is recipe is just a matter of blending ingredients in a food processor:

First, blend ingredients of your base until it becomes a doughy, nutty texture. Smooth this into the bottoms of 4 mini cups. 

Next, blend the vanilla layer until it becomes creamy. If you want it even smoother, add more coconut oil. Smooth this on top of the base. Be sure to taste it too as you may prefer to make it sweeter with more honey. 

Finally blend the coffee & chocolate layer until it becomes creamy. Again, for smoother texture, add more coconut oil. Smooth this on top of the vanilla layer. Top with fruit, cacao powder and/or chilli bits to make it fancy!
