If I could live on one food it would be mashed potatoes. Now if you're not a potato person that might seem obscene to you BUT if you are like me, then you get it...that creamy texture and savoury taste that just melts in your mouth is unbeatable!
That's why I created this HEALTHY mashed recipe; I can now eat mash as much as I want and still get some real nutrients! In this recipe that's what you get too. This is an easy healthy dinner idea that you can make in batches or quickly whip up after work. It stores well in the fridge for about x2 days.
Try it before you knock it...you might be surprised! The roasted garlic adds incredible creaminess and savoury taste to the mash. (Also there is one potato in this recipe so you don't go completely without!)
Makes: 4 servings depending on size
Start by pre-heating the oven to 180C Fan/400F. Next, take 4 garlic cloves and cut off the rough end of them, then put them on a small sheet of foil, drip them in olive oil and roll them up in the foil. Bake for 30 minutes. (I know this seems excessive but if you're a fit foodie you will really appreciate this step!)
Meanwhile, boil potato cubes and cauliflower florets until soft (about 8 to 10 min.) A fork should poke easily in and out of them.
Next, smash the cooked potato and cauliflower in a big bowl with a fork or use a food processor to blend smoother. Add the olive oil, followed by the nut milk as you go. You may need more or less milk depending on the texture you want.
Finally, smash roasted garlic into your mash. (Add into food processor if you want even more well distributed.) Season with salt and pepper to taste.
Top with a bit of olive oil and chives for a fancy touch!
