The online word is filled with avocado recipes - unfortunately most of them involve smoothie bowls (too filling for me) or toast (which I don't eat much of.) BUT I LOVE avocados. This is for those of you that love them too.
This is one of the easiest recipes I have up on the blog and one of the tastiest. So grab your avocados and give it a go. Don't worry about the messy eating (and yes it does get a little messy even with a fork and spoon...but you probably won't care after your first bite!)
First, scoop out some of the center of each avocado half. Leave about 1/2 of the "meat" inside of the fruit but the rest you'll want to remove with a small spoon. You can use this avocado meat for another recipe or mix with any extra salsa when you're finished for a guacamole dish (extra recipe yay!)
Next, prepare your salsa. You want to make sure that all the ingredients are really finely chopped. Think smaller than bite-size. They have to fit into your avocados after all! The salsa involves putting all the ingredients (minus the avocados) into a large bowl and mixing gently. Add salt and pepper as needed to taste.
Carefully scoop the salsa into the avocado halves using a small spoon. Serve immediately. If you can't handle eating all of them at once, remember you can always just scoop them out entirely and make that guacamole!
