I've eaten rice only a handful of times each year and never at home. Shocked? I know! It did take some getting used to but what I realised is that what I actually liked about rice was the texture and fullness of it; I love the way it soaks up flavours. I didn't really care about the taste of it. If you make this recipe enough times, I promise you the cravings for rice will go away!
Makes 4 servings about the size of a small side
INGREDIENTS
First, prepare your cauliflower. I like to chop mine in big chunks and then add them bit-by-bit to a food processor. Blend until you get the grainy texture of rice. Set aside.
Next, cook coconut oil + cumin + red onion in a skillet over medium high heat. Once the onions begin to soften, add your garlic and cook for an extra 30 seconds or so.
Now, add all spices + ground cauliflower. Cook until soft - usually 3 -5 minutes. Avoid overcooking as you still want some crunch!
Serve as a side, topped with chopped coriander/cilantro.
