Jackfruit Vegan Recipes: Jackfruit BBQ Bowl
Truth be told I never cared much for BBQ...but that was because I hadn't tried it homemade! The difference is night and day! Honestly you can pour homemade BBQ sauce on anything and it will taste delicious.
This jackfruit vegan recipe is particularly yummy though because of it's texture. Jackfruit is often called the "vegan pulled pork." You'll get the same chewiness and jackfruit soaks up BBQ EVEN better I would venture to say!
Try this recipe at your next cook-out or just when you feel like smothering something in BBQ sauce!

Jackfruit BBQ Ingredients
2 cans jackfruit
Greens your choice
Toppings your choice (e.g. radishes, cherry tomatoes, guacamole)
1 white onion peeled and chopped bite-sized
2 cloves fresh garlic peeled and minced or chopped
1.5 cups pasta sauce
2 tbsp maple syrup
1 tbsp dijon or stone ground mustard
1 tbsp soy sauce (sub coconut aminos for paleo)
1 tbsp white wine vinegar (red will also work)
1 tsp each: paprika and cayenne
Salt to taste

Oil for cooking in skillet
- Begin by draining your canned jackfruit and cut off the thick stem bit from each piece. Leave to air dry a few moments.
- Heat onion with oil in skillet over medium heat until soft (about 5 minutes.) Add remaining BBQ sauce ingredients to skillet, stir and cook an additional 5 minutes.
- Finally, add jackfruit to BBQ sauce in skillet, stir well and leave to simmer over medium low heat for 10 - 15 minutes. (You can press on the jackfruit with a fork to separate it and get more of that stringy texture.) Adjust taste as needed and assemble your bowl.
