Healthy Pancake Recipe: Pumpkin Pancakes

This pancake recipe is for all you pumpkin lovers out there that would eat an entire pumpkin pie if you could but want to save that for the special days!

This is an easy healthy pancake idea that is filling and very satisfying while giving you protein and fiber to power your day. These pumpkin pancakes can be used for a weekend brunch or even for meal prep for breakfast at the office. 

 

This is a 5 ingredient or less recipe and a 5 minute or less healthy recipe!

Makes: 8 to 10 pancakes
Prep Time: 5 minutes
Cook Time: 5 minutes 

Total Time: 10 minutes

Healthy Pancake Recipe | Pumpkin Pancakes

Healthy Pumpkin Pancake Ingredients 

  • 1 can pumpkin puree
  • 2 eggs
  • 1/2 cup oats 
  • 1/4 cup coconut yogurt
  • Optional: 1 tsp vanilla extract and 2 tbsp maple syrup

Equipment & Extras  

  • Food processor (can also use electric mixer)
  • Skillet
  • Sunflower Oil, Coconut Oil, etc. for greasing skillet
  •  

    Recipe Steps

    1. Heat wide skillet (lightly greased) over high heat until oil sizzles (this is the secret to perfectly crisp pancakes) then reduce heat to medium 
    2. Combine all ingredients in food processor, blend until creamy
    3. Spoon pancake batter onto skillet in round shapes, cook until edges are firm then flip and repeat
