While traveling India, it was impossible to pass up the food - it was truly incredible. Usually, I abide by moderation but not this time! However, keeping up with the local diet of ghee, butter, oil, sugar and is obviously not conducive to a fit life.
This is the first of my Fit Five India - recipes for Indian food without all (or less) of the naughtiness. A potato dish was the natural start as it's the one item I'd take with me to a desert island. Aproveita! (Enjoy!)
Grate carrot & cooked potato, add to a glass bowl. Add in cooked peas and chopped red onions. Mix everything together well with hands. Next, form mixture into small patties. You should get about 5 palm-size ones.
Gently roll patties in crushed peanuts (they will break apart easily otherwise!)
Pop patties into skillet on medium heat and cook until golden brown on both sides - about 3 to 5 minutes either side. (Oil is optional here as peanuts crust should protect them from burning.) Serve topped with sauces below and poppy seeds + sesame seeds.
