Cauliflower Rice Recipes: Cilantro and Lime Cauliflower Rice
There are a LOT of cauliflower rice recipes out there these days because it is SUCH a versatile dish. You get more nutrient density than typical rice for much less calories. While I'm not big on calorie couting, I am all about loading up on those nutrients with every bite! Simple substitutions like cauliflower rice for rice are an easy way to eat healthier!
This cauliflower rice recipe is ESPECIALLY good because it has a little tropic flavour! The cilantro and lime bring a BIG flavour splash to the cauliflower which is great because sometimes cauliflower alone just doesn't cut it!

NUTRITIONAL BENEFITS OF THIS HEALTHY MEAL
- Fiber (Cauliflower)
Vitamin C, VItamin K, B6, Folate (Cauliflower)
1 head of cauliflower
3 cloves garlic, peels removed
2 handfuls of cilantro/coriander loosely chopped
Juice from 1/2 lime (more if you like)
Salt + Pepper to taste
Equipment & Extras
Food Processor (you could also just chop if necessary)
Splash of oil for cooking
- Prep your cauliflower by removing the leaves (save those, you can toast them later for snacking) and separate cauliflower into small florets.
- Combine cauliflower florets and garlic in food processor and blend until rice size, remove and dump into a skillet with oil.
- Cook rice over medium heat, stirring frequently, until soft (approx 5 to 7 minutes.) Remove from heat.
- Stir in chopped coriander, lime juice and salt + pepper to taste
