You're going to particularly love this healthy vegan snack recipe because it gives you a hint of sweet tempered by the lovely nuttiness of toasted sesame seeds. Beyond taste alone, you get protein as well as fiber from the seeds and cashews which help feel you full and satisfied for longer. (You also get a boost of important nutrients with this nut/seed combo thats help with immune and muscle function like zinc, magnesium, iron, vitamin B6 among lots of others!)
Even better is that this is a vegan snack that travels with you and keeps for fresh for a few days if you store it in the fridge!
Makes: 20 to 30 bites depending on size
Total Time: 15 minutes
First, toast your sesame seeds in skillet over medium heat for 10 minutes or until golden brown (no need to add oil.) The toasting is what gives these their rich flavour so don't skip this step!
Meanwhile, combine cashews, lemon juice and pitted dates in a food processor and blend until a nutty paste forms.
Once sesame seeds are nearly golden brown, lightly stir this nutty paste directly into the skillet and stir for about 2 to 3 minutes. Doing this will better help the seeds stick to the paste.
Remove from heat and make small balls with sesame-nut paste. Then finish off by sticking one or two cranberries directly into the center of your ball for a hint of sweet tartness. Take a bite and enjoy!!!
