This is another one of my favorite easy vegan snack ideas! This simple healthy snack recipe gives you plant-based protein for your workouts from the chickpeas and packs up perfectly as a vegan travel snack. As one of my 5 ingredients or less recipes, this is an easy one for you too!
With this healthy vegan snack recipe it's just a matter of throwing it in the oven, tossing it in a bowl and giving it a quick little reheat. There is a touch of sweetness from the maple syrup but not too much so that this stays primarily nutrient rich rather than just empty calories that you would get from most sweet snacks. Finally, that protein + fiber combo of the chickpea will help you feel fuller for longer!

Total Time: 40 minutes
Preheat oven to 190C/375F.
Put chickpeas into a bowl and add melted oil, syrup and cinnamon. Mix well until all chickpeas covered.
Next, pour chickpeas onto lightly greased baking tray (or with layer of baking paper/silicone mat.) Spread all over in a thin layer.
Bake chickpeas for 30 minutes. Check them and add an additional 5 to 10 minutes if you want them even crunchier.
