Baked Apple & Rhubarb Oatmeal

Baked apple and rhubarb oatmeal 

Baked Apple & Rhubarb “Oatmeal” drizzled in maple syrup & nut crumble. This yummy breakfast option is grain free and vegan. It’s also perfect for those of us that love the taste of baked food but struggle to actually bake! Drizzled in maple syrub and smothered in nut crumble, your sweet tastebuds will be very satisfied with this one! .

Coconut porridge/oatmeal has long been one of my main breakfast meals because it’s so simple. This topping combo was the inspiration that came to me after eating an amazing apple & rhubarb crumble but realizing I didn't have the patience to actually recreate the recipe BUT anyone can toss some fruit in the oven and throw it into a bowl right?

 

Recipe Ingredients - Toppings

  • 1 Apple peeled and chopped bite-sized
  • 2 rhubarb stalks chopped bite-sized
  • Ground pecans, walnuts & pistachios

 

Recipe Ingredients - Oatmeal/porridge 

  • 1 cup nut milk
  • 1/2 cup coconut flakes
  • 2 tbsp nut butter
  • 1 tbsp maple syrup
  • 1 teaspoon vanilla extract
  • Cinnamon to taste   
  •   

    Steps 

    Bake apple & rhubarb in oven at 180C fan/400F for 12 - 15 minutes the fruit turns until golden brown. As that bakes, heat all oatmeal/porridge ingredients (except for cinnamon and coconut flakes) in a saucepan over medium heat until your nut butter melts. 

    Once the nut butter melts, stir in coconut flakes and cook the mixture an extra one minute while continually stirring. Remove saucepan from heat. Stir in some cinnamon and top with your baked goodies and your ground nuts. Enjoy your hearty morning! 

    (Lazy tip: make an even bigger batch of the apple and rhubarb that you can save for later and just throw on top of more bowls)
